Chemical time-temperature integrators as quality monitors in the chill chain.

Summary

There is a need to develop practical systems to monitor and record from production to consumption. Time Temperature Indicators or Integrators (TTI) are such systems. TTI are defined as simple, inexpensive devices that indicate with an easily measurable, irreversible, time-temperature dependent change, the temperature history and quality status of the food they are attached to. Interpretation of the results and of possible errors is discussed.
