Chilled foods: assessment of cold-chain-related microbiological hazards.

Summary

Temperature control in the cold chain is well-defined by regulations, particularly in France. However, present regulations do not take into account temperature distribution in products or the behaviour of micro-organisms in various environments encountered in real situations (logistic circuits and the post-distribution phase). The new rules applying to international trade and the "new regulatory approach" in Europe are based on the hazard concept and require the development of risk-assessment methodology. The approach presented, is used within the framework of "Aliment Demain" (Tomorrow's Food), a French programme, and is aimed at setting up a method enabling assessment of microbiological risks throughout a logistic circuit, from production to consumption.
