Summary

European Regulation 2073/2005 concerning microbiological criteria applicable to foodstuffs explicitly mentions (Article III, paragraph 2 and Annex II) the importance of the studies on the development and survival of micro-organisms (in particular Listeria monocytogenes) in foodstuffs. The tools microbiologists can use to predict this development are aging tests (monitoring microbial growth in naturally contaminated foodstuffs), growth tests (monitoring microbial growth in artificially contaminated foodstuffs) and the predictive microbiology models, generally constructed on the basis of growth tests and/or growth curves in liquid environments. These tools and their state of the art in France and Europe are presented in this article.
