THE TECHNIQUE DESCRIBED CONSISTS IN PLACING SHELLED HARD-BOILED EGGS IN GASPROOF PLASTIC BAGS (30 PER BAG) IN AN ATMOSPHERE WITH INCREASED CO2 LEVEL AND TO MAINTAIN THEM AT 275 K (2 DEG C). MICROBIOLOGICAL CONTROLS SHOW THEY CAN BE STORED IN THIS WAY FOR TWO WEEKS. IT IS RECOMMENDED TO OPEN THE BAGS ONLY AS WANTED, PREFERENTLY HALF AN HOUR PRIOR TO CONSUMPTION. G.G.
