THE COLD STORAGE OF PEARS IS DIFFICULT DUE TO THEIR PHYSIOLOGICAL CHARACTERISTICS. THE HARVEST STAGE IS IMPORTANT, BUT IT IS ALSO NECESSARY TO COOL PEARS VERY QUICKLY AND STORE THEM AT A TEMPERATURE BETWEEN 273 AND 272 K (0 AND -1 DEG C). A LOW OXYGEN CONTENT AND CO2 SHOCKS REDUCE SCALD AND INTERNAL BROWNING. RIPENING TEMPERATURES ARE BETWEEN 283 AND 293 K (10 AND 20 DEG C) FOR 8 TO 15 DAYS ACCORDING TO SEASON.
