THE ADMISSION INTO CONTROLLED ATMOSPHERES AND/OR THE USE OF GAS PRETREATMENTS (< CO2 SHOCKS >) COMBINED WITH REFRIGERATION HAS A VERY INTERESTING SLACKENING EFFECT ON FRUIT METABOLISM. CO2 HAS A FUNGICIDAL ROLE TOO. THE USE OF THESE PROCESSES SEEMS A WAY TO BE FURTHER STUDIED IN ORDER TO PROVIDE SOME < STABILISATION > OF A GREAT NUMBER OF FRUIT DURING THEIR MARKETING.
