THE OPTIMUM CONDITIONS FOR CONTROLLED ATMOSPHERE COLD STORAGE OF CONFERENCE PEARS, WERE ESTABLISHED OVER 2 STORAGE SEASONS. OBSERVATIONS MADE AFTER 6 AND 7 MONTHS, WHEN THE PEARS WERE REMOVED FROM THE STORE AND RIPENED, CONCERNED: WEIGHT LOSS, PHYSIOLOGICAL STATE, FLESH FIRMNESS, FLAVOUR AND CHEMICAL ANALYSIS. A STORAGE LIFE OF 7 MONTHS IS POSSIBLE UNDER THE FOLLOWING CONDITIONS: 273 TO 273.5 K (0 TO 0.5 DEG C) ; 92% RELATIVE HUMIDITY ; 1.5 TO 2.0% CO2 AND 2.0% O2.
