THE OPTIMUM CONDITIONS FOR CONTROLLED-ATMOSPHERE COLD STORAGE OF BEURRE BOSC PEARS WERE DEFINED DURING 2 STORAGE SEASONS. AFTER 6 TO 7 MONTHS STORAGE AND FOLLOWING RIPENING, TESTS WERE CARRIED OUT ON WEIGHT LOSS, PHYSIOLOGICAL CONDITIONS, FLESH FIRMNESS, FLAVOUR AND CHEMICAL ANALYSIS. UNDER NORMAL ATMOSPHERE, FRUIT DOES NOT RIPEN NORMALLY, WHEREAS UNDER CONTROLLED ATMOSPHERE THE STORAGE TIME CAN BE UP TO 7 MONTHS UNDER THE FOLLOWING CONDITIONS: 273 TO 273.5 K (0 TO 0.5 DEG C), 92% RELATIVE HUMIDITY, 2% CO2 AND 2% O2.
