GIVEN A CERTAIN PERCENTAGE OF FRUIT WILL REMAIN HARD AFTER RIPENING, A SHELF LIFE OF 7 MONTHS CAN BE ATTAINED UNDER THE FOLLOWING CONDITIONS: TEMPERATURE BETWEEN 273 AND 273.5 K (0 TO 0.5 DEG C), 92% RELATIVE HUMIDITY, 5.0% CO2 AND 3.0% O2.
