Summary

CHANGES IN THE COLOUR AND VITAMIN C CONTENT OF RASPBERRIES DEPENDING UPON THE METHOD OF FREEZING AND STORAGE CONDITIONS. THREE FREEZING METHODS WERE EMPLOYED, VIZ TUNNEL FREEZING, A FLUIDISED BED AND LIQUID NITROGEN, FOLLOWED BY STORAGE AT 253 AND 243 K (-20 AND -30 DEG C). THREE TYPES OF PRODUCT PACKAGING WERE USED. IT IS SHOWN THAT STORAGE CONDITIONS HAVE A SIGNIFICANT INFLUENCE UPON LABILE COMPONENTS (VITAMIN C AND ANTHOCYANINS) AND COLOUR.
