Summary

GROWTH OF S. AUREUS WAS NOT OBSERVED AT AW 0.85, AT PH 4.3 OR AT 281 K (8 DEG C). AT 285 K (12 DEG C) NO GROWTH OCCURRED AT AW 0.90 OR AT AW 0.93 IN COMBINATION WITH PH LOWER THAN 5.5. AT AW 0.96 NO GROWTH OCCURRED AT PH LOWER THAN OR EQUAL TO 4.9. PRODUCTION OF STAPHYLOCOCCAL ENTEROTOXIN TYPE A OCCURRED UNDER NEARLY ALL CONDITIONS ALLOWING GROWTH. PRODUCTION OF THE B TYPE APPEARS AT AW 0.96 AND AT ALL TEMPERATURES. AT AW 0.93 IT WAS HARDLY PRODUCED. EXTRAPOLATION OF THESE FINDINGS TO FOOD IS DISCUSSED.
