Summary

APPLICATION OF CRYOCONCENTRATION DECREASES THE QUANTITY OF WATER THAT NEEDS TO BE SUBLIMED IN THE FREEZE-DRYING CYCLE FOR INSTANT < LIO >-COFFEE. THIS RESULTS IN A REDUCED PERIOD OF FREEZE-DRYING WHICH IS BENEFICIAL IN TERMS OF QUALITY, YIELD ANDENERGY. THE COSTS OF REMOVING WATER BY CRYOCONCENTRATION ARE ONLY 1/5 OF THAT BY FREEZE-DRYING, AND TOTAL PROCESSING COSTS ARE REDUCED BY UP TO 40%. SUBSEQUENT STORAGE LIFE AND ABILITY TO REHYDRATE WERE UNAFFECTED. C. B.
