Summary
Cleaning and disinfection using semi-quantitative surface bacteriological products is increasingly common in slaughtering, cutting and processing. However, the diversity of current sample-taking systems (contact kits, Petrifilm, gelose blades and swabbing) and the proposed markers (total mesophilic flora, fecal coliforms, total coliforms, fecal streptococii) make it difficult to choose a method and to interpret the results. The cleaning-disinfection inspections done by the authors in about 30 companies seemed to reveal differences between the results obtained by contact kits and by Petrifilm and gelose blades.
