Summary

CURRENT PRACTICE IN THE CONTAINERISED SHIPMENT OF CHILLED AUSTRALIAN BEEF AND NEW ZEALAND LAMB TO EUROPE IS DESCRIBED. SUCH SHIPMENTS ARE VACUUM PACKED AND MAY BE CARRIED EITHER IN INSULATED OR IN REFRIGERATED CONTAINERS. THE HANDLING AND CHARACTERISTICS OF BOTH TYPES ARE CONSIDERED WITH PARTICULAR REFERENCE TO TEMPERATURE GRADIENTS AS MEASURED IN BOTH COMMERCIAL AND EXPERIMENTAL SITUATIONS. FACTORS AFFECTING THE STORAGE LIFE OF CHILLED MEAT ARE DISCUSSED AND TYPICAL CARRIAGE CONDITIONS ARE IDENTIFIED.
