Summary

BON CHRETIEN PEARS WERE OBTAINED FROM THE SAME SOURCE OVER A PERIOD OF THREE YEARS AND STORED IN POLYETHYLENE LINED CARTONS AT 272.5 K (-0.5 DEG C). FRUIT WAS KEPT AT VARIOUS CONCENTRATIONS OF O2 AND CO2 FOR PERIODS OF 8 TO 12 WEEKS FOLLOWED BY RIPENING AT 293 K (20 DEG C). FRUIT KEPT AT 272.5 K (-0.5 DEG C) IN NORMAL ATMOSPHERE FOLLOWING CONTROLLED ATMOSPHERE STORAGE WAS SUCCESSFULLY RIPENED AND CANNED. AT SOME CA CONCENTRATIONS SCALD AND CO2 DAMAGE WERE EVIDENT, AND THE BEST COMPROMISE FOR KEEPING QUALITY WAS 1. 5% CO2 AND 1.5% O2. G.R.S.
