Summary
Peach cultivars Oom Sarel, Neethling and Kakamas were canned after storage for 4-6 weeks in normal atmosphere or controlled-atmosphere conditions (using 1.5% O2 + 1.5% CO2 or 2% O2 + 5% CO2). Fruit quality was judged by a taste panel 3 months after canning. Controlled-atmosphere conditions were necessary before canning if canned Oom Sarel fruits were to be of acceptable quality. In the case of Neethling, controlled-atmosphere conditions extended the possible storage period before canning from 4 to 6 weeks. For Kakamas, fruits should not be stored for more than 4 weeks under controlled-atmosphere conditions. Results are also given on nectarines and plums.
