Summary

CONTROLLED TEMPERATURE TRANSPORT IS NECESSARY TO PRESERVE THE QUALITIES OF FRESH FRUIT AND VEGETABLES. REFRIGERATION SHOULD BE APPLIED AS SOON AS POSSIBLE AFTER HARVEST AND POSSIBLY, UNDER CERTAIN CONDITIONS, IN THE VEHICLE DURING TRANSPORT. THE PAPER DESCRIBES DIFFERENT TYPES OF VEHICLES AND DEVICES FOR PRODUCING REFRIGERATION DURING TRANSPORT. THE PARTICULAR CASE OF READY TO USE VEGETABLES (MINIMAL PROCESSING) IS DISCUSSED.
