Summary

The French Association of Refrigeration (AFF) created a commission with the objective to define heat chain control conditions. Organizations and personalities working on this study are listed and the categories of standards or recommendations that can be enacted are defined. Finally, the E 18.150 standard on temperature recorders and a Guide of good practice giving information on precautions to take in the temperature control of food all along the cold chain are presented.
