Summary
NO REFRIGERATION AGENT IS SO ADAPTABLE AND EASY TO USE AS THE CRYOGENIC LIQUID GASES NITROGEN AND CARBON DIOXIDE. BOTH THESE AGENTS BEHAVE NEUTRALLY TOWARDS FOODS AND CAN BE SPRAYED DIRECTLY ONTO THEM WITHOUT ANY MISGIVINGS. THE INERT BEHAVIOUR AND THEIR USE AS REFRIGERATION AGENT DOES NOTINVOLVE IN ANY PROBLEMS AND IS ALSO HARMLESS TO THE ENVIRONMENT. THE GASES ARE PRODUCED FROM NATURAL SOURCES OR FROM THE SURROUNDING AIR AND ONCE THEY HAVE RELEASED THEIR REFRIGERATING ENERGY CAN BE RETURNED TO THE SURROUNDING AIR.
