Isolation and characterization of proteoglycanes. Changes in activities of the beta-N-acetylhexosaminidase and of the beta-glucuronidase after 7 days storage in ice. The degradation of proteoglycanes could contribute to the de-stabilization of extracellular matrix and to flesh softening.
