Summary

STUDY TO DETERMINE THE INFLUENCE OF THE PERIOD OF FISH STORAGE IN ICE ONTHE ACTIVITIES OF PROTEOLYTIC ENZYMES AND THE ENZYMATIC HYDROLYSIS OF PROTEINS. THE EXPERIMENTS HAVE SHOWN THAT THE STORAGE TIME CAUSES CHANGES IN PROTEASE ACTIVITY AND THE INTENSITY OF PROTEIN HYDROLYSIS, THE FORMER ACTIVITY BEING HIGHER IN WHOLE FISH THAN IN MUSCLE.
