Summary
Use of nitrogen as a substitute of water vapour. Liquid nitrogen is delivered to the factory in road tankers. The article describes the process and equipment: changes to be implemented in the vacuum system; operating conditions. Comparative deodoration results are given (tables) for olive and sunflower oil. The advantages of nitrogen deodoration are: energy savings, reduced water consumption and purification cost; no hydrolysis; improved oil stability; higher acid content in deodoration distillate. J.G.
