Summary

ETHANOL CONCENTRATION IN HEAD SPACE OF CLOSED JARS CONTAINING GRAPE BERRIES MAINTAINED IN ANAEROBIC ATMOSPHERE AND IN TEMPERATURE CONTROLLED CONDITIONS WAS FOUND TO BE PROPORTIONAL TO THE CELLULAR ETHANOL CONTENT OF BERRIES. SO, IT IS POSSIBLE TO FOLLOW ETHANOL VARIATIONS IN BERRIES DURING ANAEROBIC METABOLISM BY A NON-DESTRUCTIVE AND ACCURATE TEST. GAS CHROMATOGRAPHIC DETERMINATION METHODS ARE DESCRIBED AND RESULTS OBTAINED WITH TWO SETS OF ANAEROBIC METABOLISM ASSAYS ARE DISCUSSED.
