Summary

Grapes cv. Isabel were stored at 25 or 4 °C, with or without a vacuum pressure of -60 kPa at the beginning of the storage process. Cold storage reduced the production of ethanol and methanol. Ethyl acetate production was reduced by cold storage + vacuum pressure. Ethanol production was increased by vacuum pressure at room temperature and reduced by it under cold storage. Cold storage reduced the percentage of split grapes, while vacuum pressure increased it.
