FROM TEST STUDIES, THE RATIONAL FREEZING CONDITIONS OF MEAT PIES WERE DETERMINED: FREEZING RATE WARRANTED BY THE COOLING OF AIR FROM 243 TO 233 K (-30 TO -40 DEG C) AT 4-5 M/S. ORGANOLEPTIC EVALUATION AND THE RESULTS OF THE STUDY OF THE PHYSICAL AND CHEMICAL INDICES OF THE PRODUCT UP TO AND AFTER FREEZING AND DURING STORAGE JUSTIFIES BE CONFIDENT THAT, WHEN FREEZING IN THE RECOMMENDED RANGE OF RATE AND STORAGE PRESSURE, THE STABILITY OF PRODUCT IS PROVIDED.
