THE VARIATIONS OF REVERSIBILITY COEFFICIENTS WERE CALCULATED AND REPRESENTED FOR VARIOUS FREEZING RATES OF POULTRY. FROM THE RESULTS OBTAINED, IT CAN BE RECOMMENDED TO FREEZE POULTRY CARCASSES AT 2.9 CM/H. HIGHER FREEZING RATES BRING NO IMPROVEMENT OF THE REVERSIBILITY COEFFICIENTS. R.R.
