Summary

This article deals with a novel packaging system for the storage of fresh mozzarella cheese, based on the formation of gel using natural polysaccharides which are able to preserve its physical, organoleptic and nutritional characteristics for long periods, without the need to sterilize milk or the final product. The results of analysis of appearance, microbiological tests and pH measurements on mozzarella stored in the innovative gel for up to 15 days demonstrate that the stored mozzarella retains the physical and microbiological properties typical of the fresh cheese.
