A MANUALLY OPERATED VERTICAL ICE CREAM FREEZER COMPRISES A DOUBLE-WALLED CYLINDRICAL ASSEMBLY MADE-UP OF AN INNER VESSEL WITH A STIRRER AND AN OUTER VESSEL WITH THE SPACE IN BETWEEN HOLDING A FREEZABLE AGENT, EG WATER WITH SALTS, SUCH AS SODIUM CHLORIDE, OR GLYCOL ORALCOHOL TO GIVE TEMPERATURES OF PREFERABLY 266 TO 256 K (-7 TO -17 DEG C). FINS ARE PROVIDED IN THE SPACE TO ENHANCE HEAT TRANSFER AND SPREAD IT UNIFORMLY OVER THE ENTIRE HEIGHT OF THE FREEZER. SEVERAL OTHER ADVANTAGES ARE CLAIMED. (DAIRY SCI.
