Economic functioning of cold stores.

Fonctionnement économique des chambres froides.

Summary

This study deals with intermittent operating cold stores, in order to achieve energy saving without causing deterioration of stored products. To reach this goal, the authors proceeded by thermal measures, determination of the real characteristics of the refrigerating units, and analysis of applicable solutions for the economic functioning of a frozen fish warehouse: SONIT-Pêche. The use of the data obtained and application of the specific energy cost of storage criterion, taking into account the product storage life and the capacity of cold rooms, made it possible to reach an optimal solution for the preservation of products. The implementation of one of these solutions in a cold room operating at -18 °C, has given results that comply with storage standards, over a period of 3/4 months.
