Summary

Air velocity, temperature and relative humidity variations have been measured according to time and location in an apple store. Results have revealed a good air mixing in zones where products are not stacked, but poor air penetration through pallet stacks. Factors likely to improve temperature homogeneity, possibly zone by zone, are being sought.
