Summary

The results obtained suggest that chitin hydrolysate has a cryoprotective effect on myofibrillar protein. It is hypothesized that the mechanism of cryoprotective effect of chitin hydrolysate may be caused by an interaction between the hydration sphere of myofibrillar protein and equatorial OH groups in the molecular structure of chitin hydrolysate.
