Summary

The effects of cold storage at -16-18 °C for 24 hours or tunnel storage at -72 °C for 5 minutes followed by storage at 10 °C for 26 hours on the chemical composition of acerola fruits from Maranhao, Brazil, were determined. Vitamin C (ascorbic acid) content of the fruits decreased by 14.48% with tunnel storage and by 19.4% with cold storage. Tunnel and cold storage did not affect total soluble solids (TSS), total titratable acidity (TTA), pH and TSS:TTA ratio.
