Summary
The physical, chemical and microbiological properties were determined for asphodel honey stored in darkness for 24 months at 4, 18-27 or 15-22 deg C. At the end of storage, an increase in total acidity and HMF content and a decrease in the diastasic index and bacteria count were noted. The microorganisms involved are mainly yeasts and spore-forming aerobic bacteria. Honey composition was little affected by the storage conditions.
