Summary

Analyses were done of the physico-chemical and sensorial properties and composition of meats of young, 80-day-old pure Kamienic rams and rams from F1 cross-breeding with the breeds Berrichon du Cher or Ile de France. Analyses were done on fresh meat and on meat stored for 30 to 180 days at -28 deg C. Variations in lipid composition were studied as a function of storage duration, as regards deterioration in sensorial quality.
