Type of article: Article
Summary
Establishment of regression equations describing the effects of inoculation rate, water activity, storage temperature and O2 concentration in head space on growth of A. flavus and aflatoxin production. Packaging under total anaerobiosis with use of Ageless oxygen absorbers enables inhibition of fungal growth and aflatoxin formation.
