REPORT OF TESTS ON 320 POULTRY UNITS, FED UNDER SIMILAR CONDITIONS, 5 TO 8 WEEK OLD, FROZEN IN POLYETHYLENE PACKAGING AND STORED TEN WEEKS AT 253 K (-20 DEG C). AFTER THAWING IN ABOUT 48 HRS AT 277 K (4 DEG C), BREAST AND THIGH MUSCLES ARE WRAPPED IN AN ALUMINIUM FOIL, THEN BROILED 6 MIN AT 493 K (220 DEG C). THE ORGANOLEPTIC CHARACTERISTICS ARE BETTER FOR BREAST THAN THIGH MUSCLES, IMPROVE WITH AGE ; THEY ARE MORE SATISFACTORY (JUICINESS, TENDERNESS, GENERAL ACCEPTANCE) IN MALES THAN IN FEMALES. G.G.
