Summary
THE AUTHORS FIRST PRESENT THE RESULTS OF A STUDY OF THE NUTRIENT VALUE OF SEMI-FABRICATED PRODUCTS ACCORDING TO THE AMOUNT OF MUSCLE TISSUE AND FAT. IN ORDER TO ESTABLISH THE STORAGE LIFE OF FROZEN SEMI-FABRICATED PRODUCTS AN EVALUATION WAS MADE OF THEIR PHYSICO-CHEMICAL AND ORGANOLEPTIC PROPERTIE THE TEST RESULTS FOR THE PRODUCTS STORED AT 243 K (-30 DEG C) SHOW THAT THE PERCENTAGE OF WATER (IN WEIGHT) CHANGES BUT LITTLE. THE RESULTS OF THIS STUDY ON THE PRODUCTS BASED ON TISSUES STORED AT 255 K (-18 DEG C) ARE PRESENTED. THE LONGEST STORAGE LIFE IS ESTIMATED AT 90 DAYS. R.R.
