Effect of solutes and freezing velocity on the dendritic spacing of ice crystals.

Summary

In the study a controlled temperature microscope stage was used to observe the effect of solutes and freezing velocity on the dendrite spacing of ice crystals growing within ice cream model solutions. The interface velocities ranged from 0.005 to 0.300 mm/s. In all instances, dendrite spacing decreased with an increase in the interface velocity, with an approximately linear relationship between the dendrite spacing and the inverse square root of the interface velocity.
