Summary

IT WAS ESTABLISHED EXPERIMENTALLY THAT IN A ONE-YEAR STORAGE OF CANNED MACKEREL IN OIL (UNDERSMOKING) AT 267-265 K (-6 TO -8 DEG C), AEROBIC BACTERIA DISAPPEAR AND ANAEROBIC BACTERIA ARE MAINTAINED AT THE SAME LEVEL. AMONGST THE ANTISEPTICS STUDIED, BUTYLHYDROXYANISOLE HAS THE GREATEST BACTERICIDAL EFFECT AS WELL AS THE SODIUM BENZOATE (0.1%) AND NISIN (0.05%) MIXTURE INTRODUCED IN THE CAN WITH OIL. R.R.
