Effect of sugar treatments on freezing of strawberries.

Summary

In the study, washed strawberries were treated with sugar, applied in crystal form and in the form of solution. During the freezing process, some effects of sugar on the freezing time were observed. Freezing point depression on sugar-treated strawberries was determined, and the effects of calcium chloride (1.5% w/v added into washing water) on freezing and thawing operations were investigated.
