Summary

THE EFFECT OF THE FORMATION OF EUTECTIC MIXTURE, IN WHICH THE COMPLETE FREEZING OF SOLUTION OCCURRED, ON THE FREEZE-THAW DAMAGE OF SACCHAROMYCES CEREVISIAE. THE SURVIVAL RATE OF THE YEAST DECREASED MARKEDLY WHEN THE SUSPENSION WAS FROZEN TO THE TEMPERATURE FORMING THE EUTECTIC MIXTURE. THE DECREASE OF THE VIABILITY WAS OBSERVED WHEN THE FORMATION OF THE EUTECTIC MIXTURE WAS COMPLETED BETWEEN ABOUT 263 AND 233 K (-10 AND -40 DEG C). LESS DECREASE RATE WAS OBTAINED WHEN THE FORMATION OF THE EUTECTIC MIXTURE WAS NOT COMPLETED IN THIS RANGE. THE VIABILITY OF YEAST CELLS DECREASED MARKEDLY WITH THE FREEZING IN THE SOLUTION OF DULSITOL OR MANNITOL WHEN THE CRYSTALLIZATION OF THE SOLUTION OCCURRED IN THE RANGE.
