Summary

The surface heat transfer coefficients encountered in air blast freezing of plastic wrapped whole chicken, traypacks of chicken parts and boxed chicken parts were determined. Freezing of these items was simulated using a numerical method based on enthalpy formulation. A series of experiments were conducted using poultry packages at three different air blast velocities. The experimental temperature histories were compared with simulated temperature histories to estimate surface heat transfer coefficients and the results were presented as dimensional and non-dimensional correlations. Approximate analytical methods based on Plank's equation were developed to predict freezing times.
