Summary

Post-harvest vitamine C content was 116.3-116.4 milligrams per 100 grams of broccoli and 60.5-64.7 milligrams per 100 grams of cauliflower. The biggest losses in vitamine C weree seen during blanching. Freezing modifies only slightly the concentrations of vitamine C. After 12 months of refrigerated storage, vitamine C content was 54.9-57.4 milligrams per 100 grams in broccoli and 38.5-41.9 milligrams per 100 grams for cauliflowers. These values are slightly different at -30 and -20 deg C.
