Summary

Comparison of microflora changes in chicken breasts during storage at either 3 or 8 deg C after air, vacuum or controlled-atmosphere packaging, the latter with different proportions of carbon dioxide and nitrogen. At these temperatures, the behaviour (survival and growth) of Yersinia enterocolitica and Aeromonas hydrophila was studied in vacuum- and modified-atmosphere packaged meat.
