Summary

THE INFLUENCE OF THE COOLING METHOD ON THE QUALITY OF BROILERS. THE FOLLOWING MIXTURES OF GASES WERE TESTED: A: 75% CO2, 20% N2, 5% O2 AND B: 50% CO2, 40% N2, 10% O2. THE UNPACKED CHICKENS WERE KEPT IN GASPROOF BOXES, IN POLYAMIDE/POLYETHYLENE PLASTIC BAGS, IN VACUUM PACKAGING AND IN THE OPEN AIR. IT WAS NOTICED THAT THE STORAGE LIFE OF CHICKENS IN A CO2 ENVIRONMENT WAS LIMITED BY CHANGES WHICH TOOK PLACE IN THE FAT. BONELESS PARTS FOR PACKAGING SHOULD BE COOLED BY A METHOD WHICH DEMANDS LIMITED QUANTITIES OF WATER. INTHE A ENVIRONMENT, CHICKEN STORAGE LIFE WAS 3-4 WEEKS IN GASTIGHT BOXES AND 3 WEEKS IN PLASTIC BAGS.
