Summary

Asparagus were harvested and packaged then overwrapped with perforated or non perforated film. Normal commercial treatments were performed on the packs. During experiments, atmosphere in the packs was analyzed, as well as all features of asparagus (tenderness, flavour, bitterness, galactose, arabinose, xylose, lignin, etc). Results are given and discussed.
