Summary

MINCED HORSE MACKEREL WAS WASHED IN ORDER TO IMPROVE THE COLOUR AND TO REMOVE SOME MATERIALS RESPONSIBLE OF THE DETERIORATION, WITHIN A SHORT TIME, OF THE FROZEN PRODUCT (LIPIDS, TRIMETHYLAMINE OXIDE, TRIMETHYLAMINE, SOLUBLE PROTEINS AND MINERALS). THE WASHING PROCESSES WERE DONE WITH ICED WATER AT MINCE/WATER RATIOS RANGING BETWEEN 1/2 AND 1/10, WASHING TIMES OF 5 TO 30 MIN AND COTTON OR NYLON CANVAS WITH DIFFERENT MESHES FOR CENTRIFUGATION. THE BEST WASHING TIME IS 30 MIN, THE BEST MINCE/WATER RATIO IS 1/5 AND THE MOST CONVENIENT CENTRIFUGATION CANVAS IS NYLON FABRIC WITH 0.205 MM2 MESHES.
