FROZEN STORAGE OF RECOVERED FLESH FROM HORSE MACKEREL (TRACHURUS TRACHURUS).

Summary

FISH CAUGHT IN JUNE WERE SUBJECTED TO SOME DELAYS AT AMBIENT AND CHILL TEMPERATURES BEFORE FREEZING. FISH FROM EACH TREATMENT WERE STORED AT 243 K (-30 DEG C) AS: (I) WHOLE FISH ; (II) MINCE STORED IN WAXED CARD BOXES ; (III) FISH FINGERS MADE FROM THE MINCE AND STORED IN WAXED CARD BOXES. CHANGES WERE ASSESSED AND COMPARED AFTER 6 MONTHS. THE RESULTS SUGGEST THAT FISH FINGERS HAD DETERIORATED MOST AND THE WHOLE FISH LEAST. THE LATTER SHOWED LITTLE CHANGE.
