THE ADVANTAGES OF QUICK-FREEZING FRUIT, BERRIES AND VEGETABLES WITH DRYING PRIOR TO THE USE OF CONVENTIONAL FREEZING PROCESSES ARE SHOWN. FOR QUICK-FREEZING WITH PREDRYING, A MUM PLANT WITH A TURBOCOOLER IS USED, COOLING AIR TO 223-193 K (-50 TO -80 DEG C). THE USE OF HOT AIR FOR DRYING FRUIT, BERRIES AND VEGETABLES INCREASES THE THROUGHPUT OF THE PLANT BY ABOUT 1.7 TIMES AND DECREASES THE SPECIFIC FREEZING COST BY 25%. THE AUTHORS RECOMMEND CONSIDERATION OF THIS TECHNOLOGY WHEN PLANNING NEW COLD STORES WITH A QUICK-FREEZING SECTION.
