THE POTENTIAL USE OF THE FREEZE-DRYING OF VEGETABLES AND BERRIES IN ORDER TO OBTAIN FOODSTUFFS WITH LOW OR MEDIUM MOISTURE CONTENT IS REPORTED. FREEZE-DRYING CAN BE COMPARED, AS REGARDS ENERGY COSTS, WITH OTHER PRESERVATION PROCESSES. METHODS FOR INCREASING THE EFFICIENCY OF FREEZE-DRYING ARE SHOWN.
